UTILISATION OF MILK BY DAIRIES IN ENGLAND AND WALES

 

 

The attached tables show the results of the survey of dairy companies for the months of January 1998 to April 1998 as well as revised annual totals for 1997.

The attached charts show the utilisation of milk and milk fractions for liquid milk, total manufacturing, butter, cheese, skimmed milk powder and condensed milk.

The survey has achieved a high response rate, but falls slightly short of the total of milk available to dairies. Over the period of January to April 1998 the survey is estimated to have accounted for 97.7% of the milk available to dairies in England and Wales.

We estimate that most of the milk unaccounted for by the survey will be used for liquid milk or cheese with small amounts being used for cream, yoghurt, other products and stock change and wastage.
